   The Fourth Day of Christmas       

Sweet #Horseradish Spread

Complete with the “WOW” factor. #Adult twisslers to be enjoyed with good wine and great friends. For best results, add a few teaspoons of water on the cookie sheet to give more “umph” to the pastry.

 

#PROSCIUTTO TWISSLERS

 

2/3 cups (175g) grated old #cheddar #cheese

2 tsp. (5g) capers (drained & chopped)

3 tbsp. (40ml) grated #parmesan

4 tbsp. (50ml) Sweet #Horseradish Spread

cracked black pepper

100 g thinly sliced prosciutto, cut lengthwise into ½ inch slices

Egg wash (mix ¼ cup water with 1 egg yolk)

1 sheet rolled puff pastry (cut in half lengthwise)

Preheat oven to 400 degrees F.

Line 2 baking sheets with parchment paper or alternatively, spray baking sheets with non-stick cooking spray. Keep pastry in refrigerator until ready to roll out.

In a medium sized bowl, combine grated cheddar, chopped capers, parmesan and Sweet Horseradish Spread. Set aside.

Divide the sheets of pastry in 2 to make rolling it out effortless. On a lightly floured counter, use a rolling pin to evenly flatten sheet into a 10 by 12 inch rectangle. Spread half of the cheese mixture onto half the rolled out pastry. Fold over the pastry to enclose the cheese mix and press firmly from the centre to the edges. Brush rolled out pastry with egg wash and place thinly sliced prosciutto onto pastry and gently press into pastry. Using a sharp knife, cut the pastry lengthwise into 12 strips. One strip at a time, proceed to twist as follows: pick up each strip and begin to twist at both ends. Brush finished with twists with egg wash before baking.

Transfer twisslers to prepared baking sheets and gently press each ends of the twissler. Place on baking sheet without overcrowding. (Can be made up to 1 day in advance and baked shortly before serving)

Bake for 8-12 minutes or until twisslers begin to puff up and are golden. Remove from oven and allow to cool for 5 minutes. Using a spatula, transfer them to a wire rack to cool completely. Immediately serve with wine as appetizers.

Leftovers can be stored in an airtight containers in refrigerator and freshened up by placing in a 350 oven for 5-8 minutes or until crisp again.

Yields 18–24 twisslers.
